Caring Edinburgh mum bakes bread for food banks to help kids with severe allergies

An Edinburgh mum has been crowned 'Scotland's Bread Hero' after turning a difficult situation into a booming business and helping local food banks.

Sabine Klaus-Carter of Calvin Foods, Edinburgh, managed to turn the challenging personal experience of her son suffering with numerous food intolerances into a bread-making business, catering for all allergies.

She claimed first prize in the Tiptree World Bread Awards with Brook Food. Tiptree preserves are now sold globally, many of which are made with fruit that is still grown in Essex.

Sabine's business helps a lot of people that find themselves in a similar situation to herself after she came up with the idea from people saying they also struggle to find safe free-from bread locally.

Since Sabine's business launch in July 2020, she has helped contribute to local food banks, as well as helping overcome severe food allergies.

Another Edinburgh based baker, David Stubley, also triumphed in the same awards, winning both runner up for Scotland and the KitchenAid Home Baker Award.

During the pandemic. David built up an impressive social media following due to his creative sourdough baking and used that platform to encourage bakers around the world, offering support and encouragement.

Abha Kholsa from California, one of David's nominators, said: "I would text him pictures of daily progress of my sourdough starter (which I named Jackie Chan), and daily he would give me tips on temperature, moisture control, when to feed it and how to test if it was ready."

Abha also commented on how David inspired her father to take part in baking, bringing the two of them closer together during the difficult pandemic and connecting Scotland to California and then to India, through the power of sourdough.

Hundreds of nominations for the awards that Sabine and David were presented with were sent in from across the UK.

One of the judges, Britt Box, said: "It has been another strange year and it is so lovely to read stories of the bread heroes who have carried on, diversified, given back and risen to the challenge. They are all an absolute credit to their communities."
