Buckingham Palace staff's 52p trick to make cucumber sandwiches taste 'wonderful'

Deciding what to eat for lunch when the weather warms up can be tricky, as you might find yourself desperate for something refreshing but unsure what exactly that is.

Perhaps, with the royal festivities in mind this weekend, you might consider taking a leaf out of the royal family's book.

The late Queen Elizabeth II used to enjoy small cucumber sandwiches as part of an afternoon tea served to her each day by Buckingham Palace staff.

But it seems the chefs at the palace have a secret ingredient they added to the humble snack to elevate the taste.

This is according to television presenter Jenny Hanley, who previously appeared on Boom Radio to share her experience of attending a Garden Party at the palace.

She explained that while there she enjoyed cucumber sandwiches and said they were "wonderful".

Jenny recalled: "The most wonderful thing that happened at one of the Buckingham Palace garden parties that I was lucky enough to go to was not the fact of the scones but the cucumber sandwiches.

"They may be a joke to some people, but when you've had a cucumber sandwich out on the grass at the back of Buckingham Palace and the sun is shining and there's mint in it, then you know you've made it!"

"I will never make a cucumber sandwich without chopped mint in it again."

The sandwiches were made with white bread, buttered, and topped with sliced cucumber, a dash of mint, and a sprinkle of pepper.

You can buy fresh mint from the likes of Tesco and Sainsbury's for as little as 52p to give it a go for yourself.

Alongside the sandwiches, Queen Elizbeth II also used to enjoy a cup of tea and her preference was for for Earl Grey or Assam, with a splash of milk added afterward.

She also loved a slice of chocolate biscuit cake, according to her former chef, Darren McGrady.

The sweet treat is made with dark chocolate and Rich Tea biscuits and even Prince William and Kate Middleton are said to be fans, with the couple reportedly serving some at their wedding.

Jenny Hanley presents a show on Boom Radio every Saturday at 2pm-4pm. Boom is a UK-wide national radio station principally aimed at Baby Boomers aged 60 to 75 years old. Jenny will be talking about her royal encounters on her show on Saturday, June 4. See www.boomradiouk.com/jenny-hanley.
