The brothers behind acclaimed cocktail bar Schofield’s are planning to open a new project at Gary Neville’s Stock Exchange Hotel. Called Sterling, it will take over the space formerly known as The Vault, in the hotel’s lower ground floor.
Joe and Daniel Schofield, who opened Schofield’s bar on Little Quay Street just last year, but has since become a fixture among cocktail aficionados, will be working alongside Paola Mariotti as general manager, who has worked in world class venues like The American Bar at the Savoy and The Blue Bar at The Berkeley in London.
Joe Schofield said: “We have been planning this new concept for a long time and now it’s nearing completion. Stock Exchange Hotel is a particularly meaningful venue for us as our mother used to work at the Stock Exchange.
“Our grandmother also learnt to swim in the old pool at the basement in our original Schofield’s Bar location. As we continue to evolve our operations in Manchester, it’s warming to have a connection to the past, as that very much reflects our approach to our offering.”
Gary Neville added: “From the moment I walked into Schofield’s Bar some 8 or 9 months ago and met Joe and Daniel I felt like I was walking into an international quality destination but with a local feel and an understanding of the spirit of Manchester. We spoke about how we had grown up in Bury and the times we had there!
“I genuinely can’t wait now for Sterling to open in Stock Exchange Hotel and develop this partnership with the Schofield brothers.” The bar is set to open in the summer.
The Stock Exchange Hotel opened back in 2019, courtesy of the former United star turned property developer. He soon brought in Michelin star-winning chef Tom Kerridge to take on the Bull & Bear restaurant, situated on the former trading floor of Manchester’s former financial centre.
Kerridge will also supply a snack menu for Sterling too, which will be open five days a week, and be spread across the 2,400 sq ft space, which will seat 100 people. Like Schofield’s, the bar will focus on a range of classic cocktails, along with a superior wine list curated by wine expert James Brandwood.
Schofield’s was named in the UK’s Top 50 cocktail bars earlier this year, and is the second spin-off bar to open in the city from Joe and Daniel Schofield. They opened Atomeca at the bottom of the Deansgate Square towers last year.
