BRIEF: Son of a Butcher Tavern aims for early 2015 opening

Dec. 17--I have no idea what the best new restaurant of 2015 will be, but we've got an early leader for the best name.

Son of a Butcher Tavern, a meat-centric, Mexican-accented restaurant, is aiming for an early-2015 opening in Logan Square.

The restaurant, at 2934 W. Diversey Ave. (former home of Zen Tacas and Zacatecas), is the latest notion from Adolfo Garcia, one-time partner at Hubbard Inn and owner of Pearl Tavern. Garcia says Son of a Butcher will embrace meats such as pork cheek, oxtail and sausages of all kinds. Weekends there will be 14-hour-smoked suckling pig, sold by the pound.

Frank Valdez, chef de cuisine at Mexique, has been working with Garcia on the project; Valdez will be the executive chef when Son of a Butcher opens.
