Feb. 17--Rich Melman's chef-in-residence program has adjusted its format, still bringing in a new chef every three months but keeping one chef (Stephen Gillanders) as permanent top toque, overseeing an a la carte menu to go with the visiting chef's tasting-menu option. Best of both worlds? Quite possibly.
