June 01--Maybe third time's the charm.
Cocello, the River North Italian concept from Hogsalt Hospitality (Au Cheval, Bavette's, Maude's Liquor Bar), will reconcept once again, this time into a daytime coffeeshop that becomes a private dining space at night. A press release said it will serve "house-made baked goods including breads, muffins and cookies" and hot dishes for lunch including thin-crust pizza.
Cocello lasted for 13 months inside an expansive space at 354 W. Hubbard St. It took over a deli concept called Dillman's, which itself lasted just over a year.
Another of Hogsalt's restaurants is also changing gears: Roxie's By The Slice in Bucktown (1732 N. Milwaukee Ave.) will become a pop-up burger joint this summer ... Hey Brendan Sodikoff, maybe use the same recipe as Au Cheval's?
(Update: We're now told Roxie's will revert back to serving pizza after the summer)
Both spaces will reopen by the middle of June.
