March 16--Aya Fukai, a highly regarded pastry chef who was most recently with Sixteen restaurant, has joined the team at Maple Ash.
The move reunites Fukai with Maple Ash executive chef Danny Grant; the two worked together at Ria in the Elysian (now known as the Waldorf Astoria) back when that restaurant earned two Michelin stars.
