July 29--Aaron Martinez, the third chef-in-residence for Intro restaurant (2300 N. Lincoln Park West, 773-868-0002), will debut his menu Thursday. Here's a little preview:
The menu is full of summer flavors (if you want to cook locally in Chicago, this is the best time of year to do so), including a composition of tomato and summer melon with Benton Country ham, seaweed and flowering coriander, as well as striped bass with summer cabbage and lemon verbena, and rib-eye with cherries, eggplant and onion.
Intro will offer four-course ($55) and six-course ($85) menus Tuesday through Friday; on Saturday, only the six-course menu will be available. Optional wine pairings are $35 and $50, respectively.
Seatings are sold through the Tock ticketing system, accessible at introchicago.com, and through opentable.com.
