Breakfast of champions: Kevin Bacon’s Blast sandwich

The actor actually is quite partial to bacon, particularly in a bacon, lettuce, avocado, salmon and tomato, or Blast sandwich. (There is some controversy regarding the S: some say it should be shrimp, not salmon. You can also make it a Blast Off by adding olives, feta and focaccia, although that would probably make up your entire salt quota for the day.) Have the avocado, tomato and salmon at room temperature – they will taste much better.

Serves one
Spread one slice of bread or toast with butter and a second one with mayonnaise. Top the buttered slice with two rashers of just-cooked, crisp bacon and half an avocado, sliced, then top with a few strips of smoked salmon. Finish with three or four thin slices of tomato, a grind of black pepper and a leaf of a crunchy lettuce – cos, iceberg or batavia, say. Top with the other slice of bread or toast, mayo side down, then cut in half and eat at once.
