Brave owners open coffee shop and cocktail bar despite lockdown pressure

A brand new bar and coffee shop has opened its doors in Liverpool city centre despite the pressures of lockdown on the hospitality sector.

Butter has opened inside Collective on Seel Street, which is also home to The Highball Club, and will flip between a coffee shop by day and a cocktail bar by night.

During the daytime, Butter offers a range of fresh pastries, coffees and juices freshly squeezed on site, with a focus on sourcing products as locally as possible, with suppliers including Crosby Coffee and Paolo and Donatos Italian Deli.

By night, Butter offers a range of cocktails, wines and craft-style ales, with a twist on classic cocktails.

The coffee shop and cocktail bar has opened its doors just as Liverpool was placed under stricter lockdown restrictions, though the team says the small scale of the business makes it “easier for us to pivot and adapt to changes as local or national government legislation changes”

A spokesperson for Butter said: "Opening during this pandemic was a decision that was very difficult to make, however being a very small site means we have the ability to offer that little bit extra in terms of cleaning processes, COVID secure processes and of course the quality of products that we offer to guests.

“We are also aware that a site of our scale would be easier for us to pivot and adapt to changes as local or national government legislation changes.

“For example, we originally planned to launch our Mexican inspired food operation in November but we have expedited this and now plan to launch a limited menu for next week. This enables us to keep our offering consistent to our guests.”

Butter is open on the corner of Seel Street and Slater Street, from 8am - 10pm Monday to Thursday, and 10am - 10pm Friday to Sunday.
