
A recipe book featuring the home cooking of refugees granted asylum in Japan has been published again this month in a new format.
"Flavours Without Borders" carries recipes from 15 countries and regions in Asia, the Middle East and Africa, and was compiled by the Tokyo-based nonprofit organization Japan Association for Refugees. It retails for 1,600 yen excluding tax.
The book was published in 2013 but it eventually went out of print, making it difficult to obtain. The association decided to reprint the book as a part of an "omotenashi" hospitality effort on the occasion of the Tokyo Olympics and Paralympics this summer.
The new edition has 45 recipes including salads, fish and meat dishes, and desserts that are common in the homes of such countries as Myanmar and Iran. It is written in English and Japanese.
The recipes are slightly tailored so that readers can buy the ingredients at stores in Japan. For example, an Ugandan steamed-fish dish uses sea bream or any white fish, instead of Nile tilapia. The book also carries information about the ethnic groups of the countries and regions and their regional situations, as well as the fact that about 10,000 people seek asylum every year in Japan.
The book is available at stores or online. Part of the profits will be used to support refugees.
