Bo & Birdy at Blythswood: hotel announces new restaurant led by Scotland’s first female 5-star chef

The Blythswood Square has unveiled a new £1 million restaurant - with a star chef at the helm.

The five-star hotel and spa, in Glasgow's city centre, will open the doors at Bo & Birdy next month, with 146 covers and Gillian Matthews, Scotland’s first female five-star executive head chef, offering culinary guidance.

The promise is a relaxed, informal brasserie in the old restaurant area, closed three months ago following the purchase of the hotel by IHG, as well as a revamped bar serving cocktails and the best of Californian and French wines.

Gone are the red velvet and plush surroundings, replaced by earthy tones to ‘mirror the restaurant’s farm to fabulous identity’ with ingredients from the Scottish larder at the fore of the new menu.

Executive chef Gillian Matthews said: “I’m delighted to welcome clients old and new to join myself and the team at the new Bo & Birdy restaurant.

“Our distinctive menu has been created to present the best of Scottish produce in what I believe will be a truly modern twist on favourite and traditional recipes.

“I’m sure our guests will also love the informed and personal attention they will receive from our team.”

Murray Thomson, general manager at the Blythswood, added: “As Glasgow’s only five star lifestyle hotel, we are thrilled to introduce Bo & Birdy to Glasgow’s thriving dining scene.

“With our award-winning spa, Square Eyes Cinema Club, designer guest rooms and famous penthouse, Bo & Birdy will become an essential destination for lovers of Scottish food and drinks.

“The glitz, glamour and 5-star service at Blythswood will remain.” 

Bo & Birdy will open on May 15.
