Famous fish and chip shop chain Blue Lagoon has ambitions to open a first restaurant in Edinburgh.
The Glasgow-based eatery has been going for more than 40 years and recently expanded its iconic Argyle street outlet in a £500,000 revamp.
The family business' owners have now looked to the capital as they look capitalise on the enduring popularity of a traditional fish supper, reports The Herald.
Director Simone Varese recently confirmed plans for an Edinburgh outlet saying: “We’d like to open one in Edinburgh, but we have not found the right spot.”
It comes after the company poured nearly £1 million into opening a new Blue Lagoon in Perth.
Established in 1975 by Varese's grandfather Ersilio, Blue Lagoon currently operates 12 directly-run and franchised outlets.
A new Edinburgh restaurant would join Blue Lagoon branches in Ayr, Largs and Stirling alongside the firm's Glasgow city centre outlets.
If the move goes ahead, Edinburgh vegans can look forward to sampling the legendary eatery's brand new vegan sausage supper.
