The dark nights, cold and miserable weather, it's the perfect time of year for very little, aside from getting cosy inside and eating some seriously tasty comfort food.
And what could be more comforting than a nourishing bowl of Beef stew. Belfast's Undercover Chef on Instagram is back with another tasty recipe that is sure to go down a treat with the whole family.
The best thing about a Beef Stew is that it's a great one pot wonder, no mess, no fuss, just simple, home-cooked comfort food!
Here's what you'll need:
- 500g Steak pieces
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 3 tablespoons olive oil
- 2 medium onions, cut into 1-inch chunks
- 3 cloves garlic, peeled and smashed
- 2 tablespoons balsamic vinegar
- 1-1/2 tablespoons tomato paste
- 2 tablespoons flour
- 1 red wine stock pot
- 1 beef stock pot
- 2 litres water
- 1 bay leaf
- 1 tablespoon dried thyme
- 3 large carrots, peeled and cut into 1-inch chunks on a diagonal
- 3 large potatoes

Method
- Prep the beef and vegetables
- Heat a pan and colour the beef in small batches
- Once the beef is seared on all sides, set aside
- In the same pan fry the onions, carrots and garlic for 3/4 minutes
- Add the balsamic vinegar and reduce
- Pop the flour and meat juice into the pan with the vegetables and stir
- Add the red wine and beef stock pots with the water, tomato purée, bay leaf, thyme and salt and pepper, bring to the boil
- All the beef and stock mix into the slow cooker
- Place the lid on and cook on slow for 8 hours

The meat will melt in your mouth and the sauce will full of flavour

Serve with a warm crusty roll or wheaten bread.
