Bake Off icon Mary Berry reveals secret to cooking the perfect Christmas gammon

Celebrity cook and Bake Off icon Mary Berry hosted a BBC One special this evening to show one family in need how to make the perfect Christmas dinner.

Dame Mary Berry was on screen to teach three novice cooks delicious festive recipe.

With a helping hand from fashion designer Patrick Grant and Welsh TV presenter Alex Jones, she also headed to Leeds Castle for a magical surprise feast.

In the show, viewers were treated to Mary's secret recipe for a stunning Christmas gammon joint.

She gave her top tips on how to make the meat, which included marinating it in a healthy amount of orange juice.

"I've got a beautiful piece of gammon here," Mary said. "This is unsmoked but it could be smoked. And I have a nifty trick that makes it much easier to lift it out of the pan."

She then folded up aluminum foil into a wide, long strip and placed the gammon on top of it, before using the edges of the foil to lift it up like a handlebar and placed it gently into the pan.

Mary said: "Fold a long piece of foil into three, and wrap it under the joint. Hold it up and into the pan. Now it's very important that it fits snugly because I'm going to cook it in orange juice, which gives a lovely flavour. Pour it in. If it doesn't fit snugly you'll have to use too much orange juice," she joked.

She then instructed to add "three bay leaves" and a "couple of cinnamon sticks". Then bring to the boil on the hob, allow to simmer for five minutes before popping into a 130 degrees fan oven to cook low and slow for two and a half hours.
