Sept. 28--Willis Tower looms large over the weekly farmers market held at the plaza there (233 S. Wacker Dr.; Thursdays 7 a.m. -- 3 p.m. through Oct. 29). And while it's a small market, there are some fine opportunities for good munching at the office and cooking at home. Stamper Cheese is there, as is Logan Square bakery La Farine, selling their lovely baguettes.
With the ending of raspberry season, it's time to welcome apples to market. Honey Crisps are in stock now and are best for eating out of hand. Andre Disterheft, of D S Fruits Vegetables in Berrien Springs, Mich., says McIntosh and Gala apples are up next.
The former would work well in the recipe below, dubbed The Fastest Baked Apple (thanks to help from a microwave oven), from "The Good Housekeeping Cookbook." Apples such as Rome Beauty or Cortland would also work.
The Fastest Baked Apple: Remove cores from 4 large cooking apples (10 ounces each), but don't cut through to bottom. Peel one-third of the way down. Stand apples in small individual microwave-safe bowls or 8-inch square baking dish. Spoon 1 teaspoon butter and 1 tablespoon brown sugar into cavity of each apple. Cover and microwave on medium-high (70 percent power) until tender, about 9 minutes, turning halfway through. Cover; let stand, 5 minutes. Serve with plain or vanilla yogurt. Makes: 4 servings.
