Anantara Siam hosts Michelin-starred chef

Anantara Siam Bangkok's Madison steakhouse presents special evenings with an exclusive 5-course dinner by British chef Chris Naylor of Michelin-starred Vermeer restaurant in Amsterdam, Netherlands, on June 7 and 8.

A native of Bedford, England, Naylor has worked at a number of Michelin-rated establishments in UK and Europe with cooking authorities including Albert Roux of London's Hotel Grand; Robert Kranenborg of Amsterdam's La Rive, Le Cirque and Vossius restaurants.

Naylor took over Vermeer in 2004. Its kitchen is described as his culinary laboratory where he and his team transform everyday ingredients to complex dishes with pure and vigorous flavours. His cuisine, meanwhile, also pays great respect to seasonal produce and the land it comes from.

Thanks to his genius palate, creative spirit and audacity to push boundaries, which ensure continuous innovation of his dishes, Naylor has brought Vermeer a Michelin star in 2005–2007 and 2011 to present.

For diners in Bangkok, Naylor will showcase his creative, quirky yet clean and pure cuisine through the five-course dinner.

Featured dishes include mackerel marinated in apple and ginger with red pepper and olive bouillon; roasted and braised veal blade with pumpkin puree and horseradish granola; scallops in the shell baked in bread, fermented plum and celeriac jus; sole fillet with barbecue cabbage and mussel vadouvan sauce; chicory apple pie with strawberries marinated in mescal, lemon chiboust and miso basil ice.

The dinner is priced at 4,000 baht per person for food only, or 5,500 baht per person inclusive of pairing wine.

Some of Chef Naylor's tasting menu creations will also be on offer as a part of the hotel's Sunday brunch buffet, priced at 2,999 baht per person, on June 9.
