A Ton of flavours

A highlight of the "Fine Dining Lovers Guest Chef Series" -- on Aug 3-4 at Koh Thai Kitchen & Bar, Four Seasons Resort Koh Samui -- will be Bangkok's rising star chef Thitid "Ton" Tassanakajohn of Le Du restaurant.

Le Du, which ranks number 14 in Asia's 50 Best Restaurants 2018, serves up multi-course modern Thai cuisine inspired by the Kingdom's agricultural bounty and century-old culinary cultures.

The name derives from the Thai word rue du meaning "season" and thus reflects chef Ton's passion for seasonal produce as well as sustainable local ingredients.

A graduate from the Culinary Institute of America with the highest scores in his class, Ton had worked at several Michelin-starred restaurants in New York City, including Eleven Madison Park, The Modern and Jean Georges before coming to Bangkok.

He also received the Certified Sommelier (CS) recognition from the prestigious Court of Master Sommelier during his time in the US.

During his special visit to the 5-star tropical island resort, chef Ton will take over the kitchen of Koh Thai restaurant. The venue, designed by world-renowned architect Bill Bensley, is set atop a palm-covered hill, boasting a luxurious open-air dining space, cocktail bar and wine cellar.

The guest chef from Bangkok will prepare dishes like local sea bass with his original chilli paste; oysters with Thai rice wine; a southern Thai curry with crab and ant larvae; local dry-aged beef with cassia leaves; and duck-egg custard.

A kitchen masterclass will be held on Aug 4, giving discerning gourmands a special opportunity to learn some of the chef's trade secrets.

Price is 2,900 baht per person for food only, or 3,700 baht per person with wine pairing.
