A thousand tastes

Today and tomorrow, Vie Hotel Bangkok and V Villas Hua Hin present wine dinners by French guest chef Philippe Mille of two Michelin-starred Le Parc restaurant in France.

Mille's career started with an apprenticeship under Jean Bordier at L'Aubergade, where he learned the basics of Escoffier cuisine. Later on he joined Le Drouant and was trained under Chef Louis Grondard. Le Pré Catelan under Chef Frédéric Anton, the Ritz under Chef Michel Roth and Le Meurice under Chef Yannick Alléno followed.

Over the past two years, Mille has showcased his talent at Le Parc restaurant, his culinary brainchild in Domaine Les Crayères, France. Pleasure, generosity and childhood memories are the central inspirations for his cooking. His refined sense of all that is good about food have led him to creations so notable that they earned him two Michelin stars.

Mille is also one of the few chefs in the world to be awarded the coveted Meilleurs Ouvriers de France, the most prestigious award among all professional craftsmen in France.

In Thailand, he will showcase creations such as crab flakes with curry white onion custard "Royale" and apple; cold lobster soup with Champagne and vegetable spheres iodised with caviar; baked John Dory with tomato water and Reims vinegar; grilled beef with eggplant, mushroom, capers and vinegar; and Champagne sorbet with nut pudding and gold nuggets.

A four-course set lunch and seven-course dinner are served at La Vie restaurant of Vie Hotel Bangkok on Friday, Aug 24. Only dinner is on offer at V Villas Hua Hin on Saturday, Aug 25.

Prices are 3,500 baht net per person for a set lunch; and 6,500 baht net per person for dinner. An optional wine pairing package costs another 1,500 baht for lunch and 2,000 baht for dinner.
