
Twelve restaurants in the capital will bear a three-star rating -- the highest ranking -- in "The Michelin Guide Tokyo 2021" to be published Thursday in book form, it was revealed Monday.
Three restaurants, Kanda (Japanese cuisine) and two French restaurants, Quintessence and Joel Robuchon, have received three-star ratings for 14 consecutive years since the Tokyo edition was first published. Those newly rated for three stars include Sazenka (Chinese cuisine) and L'Effervescence (French). Two stars were given to 42 restaurants, while 158 restaurants got one star.
A new "Green Star" initiative was launched in this edition to introduce shops that practice sustainable food production. Six restaurants, including Quintessence, were selected for this category.
